Ingredients:
• 3 tablespoons further virgin oil• 2 cloves garlic, bare-ass and finely sliced
• 1/2 cup basil, leaves picked, stalks finely cut
• 1 bunch Broccolini®
• 2 giant zucchini (approx 300g), shaven lengthways in ribbons
• 1/2 lemon
• 1/3 cup (50g) faveolate kalamata olives
• 20g rocket leaves
• 50g chevre
• sea salt and black pepper
Method:
1. Heat an outsized frying pan on medium heat, add oil, garlic and basil stalks and cook 2-3 minutes.2. Add Broccolini® and zucchini and gently toss with garlic, basil, oil for 4-5 minutes.
3. Zest one teaspoon skin, sprinkle round the Broccolini® zucchini fettuccini with olives and oceanson with sea salt and black pepper.
4. Gently toss once more, then pop onto a dish or divide between 2 bowls with the rocket leaves chevre, and an enormous squeeze of lemon. Roughly tear basil over the Broccolini® fettuccini and revel in.
